The oil from Son Mir is the fruit of a careful selection of the Picual and Arbequina varieties. The extra virgin olive oil harvested at Son Mir is made with olives collected from the olive groves at the end of autumn or the beginning of winter, chosen at the moment when the olives have their highest level of fatty acids in the olive pulp. The time of harvest directly influences the composition of the oils and their sensory characteristics.
